For the Chicken
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
For the Gravy
- 1 large yellow onion, thinly sliced
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- ½ cup heavy cream or half-and-half
- 1 teaspoon Worcestershire sauce
- ½ teaspoon paprika
- ½ teaspoon black pepper
- Salt, to taste
- 1 tablespoon chopped fresh parsley
Pat the chicken breasts dry with paper towels. If they are very thick, gently pound them to an even thickness so they cook evenly.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken and cook for approximately 4–5 minutes per side, or until golden brown. The chicken does not need to be completely cooked at this stage because it will finish cooking in the gravy.
Reduce the heat to medium. Add the sliced onions to the same skillet.
Sprinkle the flour over the onions and stir well. Cook for about 1 minute to remove the raw flour taste.
Slowly pour in the chicken broth while stirring continuously. Add the cream, Worcestershire sauce, thyme, paprika, and black pepper.
Reduce the heat to low, cover, and simmer for approximately 8–12 minutes, depending on the thickness of the chicken.
Taste the gravy and adjust the salt and pepper as needed.
Sprinkle fresh parsley over the chicken and serve immediately with mashed potatoes, rice, noodles, roasted vegetables, or biscuits.
