For Crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1 ½ cups milk
- 2 tbsp melted butter
- ¼ tsp salt
For Filling:
- 200g shrimp (peeled & deveined)
- 200g scallops
- 2 tbsp butter
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
For Sauce:
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- ½ cup heavy cream
- ½ cup grated cheese (Gruyère or Parmesan)
- Salt and pepper to taste
- 1 tsp lemon juice
- Fresh parsley (for garnish)
Whisk flour, eggs, milk, butter, and salt into a smooth batter.Heat a non-stick pan and pour a thin layer of batter.
Cook each side for 1–2 minutes until lightly golden.Set aside.
Heat butter in a pan.Sauté garlic and onions until fragrant.
Add shrimp and scallops; cook until just done.Remove and set aside.
Melt butter, stir in flour to form a roux.Gradually add milk and cream, stirring constantly.
Add cheese, salt, pepper, and lemon juice.Mix until smooth and thick.
Combine seafood with sauce.Spoon mixture into crepes.
