For the Salad
- 8 ounces soba noodles
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 cucumber, thinly sliced
- 1 carrot, julienned
- 1 cup shelled edamame, cooked
- 3 green onions, sliced
- ½ cup fresh cilantro, chopped
- ¼ cup fresh mint leaves
- 2 tablespoons toasted sesame seeds
- 1 sheet nori, thinly sliced (optional)
For the Sesame Ginger Dressing
- 3 tablespoons soy sauce
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon honey or maple syrup
- 1 tablespoon fresh lime juice
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon chili flakes or sriracha (optional)
- 2 tablespoons water, if needed
Cook the soba noodles according to package instructions. Drain and rinse under cold water to cool completely.
Pat the shrimp dry and season lightly with salt and pepper.
Heat olive oil in a skillet over medium heat. Cook shrimp for 2–3 minutes per side until pink and fully cooked.
In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, lime juice, ginger, garlic, and chili flakes to create the dressing.
Place cooled soba noodles in a large bowl.
Add cucumber, carrots, edamame, green onions, herbs, and cooked shrimp.
