Ingredients
  

For the Salad

  • 8 ounces soba noodles
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 cup shelled edamame, cooked
  • 3 green onions, sliced
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint leaves
  • 2 tablespoons toasted sesame seeds
  • 1 sheet nori, thinly sliced (optional)

For the Sesame Ginger Dressing

  • 3 tablespoons soy sauce
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon chili flakes or sriracha (optional)
  • 2 tablespoons water, if needed

Instructions
 

  • Cook the soba noodles according to package instructions. Drain and rinse under cold water to cool completely.
  • Pat the shrimp dry and season lightly with salt and pepper.
  • Heat olive oil in a skillet over medium heat. Cook shrimp for 2–3 minutes per side until pink and fully cooked.
  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, lime juice, ginger, garlic, and chili flakes to create the dressing.
  • Place cooled soba noodles in a large bowl.
  • Add cucumber, carrots, edamame, green onions, herbs, and cooked shrimp.
  • Pour the sesame ginger dressing over the salad and toss gently until combined.
  • Garnish with sesame seeds and nori strips before serving.
