Shrimp burritos are a flavorful Mexican-inspired dish filled with seasoned shrimp, rice, veggies, and sauces, wrapped in a warm tortilla.

Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup diced avocado
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup salsa
  • 4 lare flour tortillas
  • Optional: Lime wedges for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Toss the shrimp with chili powder, cumin, paprika, garlic powder, salt, and pepper.
  • Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat.
  • Warm the tortillas in a dry skillet or microwave to make them pliable.
  • Assemble the burritos: Spread a layer of sour cream and salsa on each tortilla. Add a portion of rice, black beans, shrimp, lettuce, tomatoes, avocado, and cilantro.
  • Fold the sides of the tortilla over the filling, then roll it up tightly from one end.
  • Serve immediately with lime wedges, or wrap in foil for a portable meal.

Notes

  • Adjust the spice levels to suit your preference by adding more chili powder or a dash of hot sauce.
  • For a gluten-free option, use corn tortillas or gluten-free wraps.
