- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- 2 cup cooked rice (white or brown)
- 1 cup black beans, drained and rinsed
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup diced avocado
- 1/4 cup chopped cilantro
- 1/2 cup sour cream (or Greek yogurt)
- 1/4 cup salsa
- 4 lare flour tortillas
- Optional: Lime wedges for garnish
Heat olive oil in a large skillet over medium heat.
Toss the shrimp with chili powder, cumin, paprika, garlic powder, salt, and pepper.
Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat.
Warm the tortillas in a dry skillet or microwave to make them pliable.
Assemble the burritos: Spread a layer of sour cream and salsa on each tortilla. Add a portion of rice, black beans, shrimp, lettuce, tomatoes, avocado, and cilantro.
Fold the sides of the tortilla over the filling, then roll it up tightly from one end.
Serve immediately with lime wedges, or wrap in foil for a portable meal.
