- 12 oz pasta (linguine or spaghetti)
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ½ teaspoon crushed red pepper flakes (adjust to taste)
- ½ cup dry white wine
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- Salt and black pepper, to taste
- 1 teaspoon dried oregano
- ½ teaspoon sugar (optional)
- Fresh parsley or basil, chopped
Cook pasta according to package instructions until al dente. Drain and set aside.
Season shrimp lightly with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté briefly until fragrant.
Pour in white wine and simmer for 2–3 minutes to reduce slightly.
Stir in crushed tomatoes, tomato paste, oregano, and sugar if using. Simmer for 10–12 minutes.
Add shrimp to the sauce and cook for 3–4 minutes until pink and cooked through.
Toss cooked pasta with the sauce or serve shrimp and sauce over pasta.
Garnish with fresh herbs and serve hot.
