Ingredients
  

  • 12 oz pasta (linguine or spaghetti)
  • 1 lb large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ teaspoon crushed red pepper flakes (adjust to taste)
  • ½ cup dry white wine
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • Salt and black pepper, to taste
  • 1 teaspoon dried oregano
  • ½ teaspoon sugar (optional)
  • Fresh parsley or basil, chopped

Instructions
 

  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • Season shrimp lightly with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté briefly until fragrant.
  • Pour in white wine and simmer for 2–3 minutes to reduce slightly.
  • Stir in crushed tomatoes, tomato paste, oregano, and sugar if using. Simmer for 10–12 minutes.
  • Add shrimp to the sauce and cook for 3–4 minutes until pink and cooked through.
  • Toss cooked pasta with the sauce or serve shrimp and sauce over pasta.
  • Garnish with fresh herbs and serve hot.

Notes

  • Do not overcook shrimp; they become rubbery.
  • Adjust spice level to your preference.
  • Use good-quality canned tomatoes for best flavour.
  • Sauce thickens as it simmers.
  • Best served immediately.
