Ingredients
  

For the Shrimp:

  • 12 medium shrimp, peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp lime juice

For the Guacamole:

  • 2 ripe avocados, mashed
  • 1 small tomato, finely diced
  • ¼ red onion, finely chopped
  • 1 tbsp cilantro, chopped
  • 1 tsp lime juice
  • ½ tsp salt

For Assembly:

  • 12 small crackers or tortilla chips
  • Extra cilantro and lime wedges for garnish

Instructions
 

  • Cook the shrimp: In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper. Heat a pan over medium heat and cook shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat and drizzle with lime juice.
  • Prepare the guacamole: In a bowl, mash the avocados and mix with tomato, red onion, cilantro, lime juice, and salt. Stir well.
  • Assemble the bites: Place a spoonful of guacamole onto each cracker or tortilla chip. Top with a cooked shrimp.
  • Garnish & serve: Sprinkle with extra cilantro and serve with lime wedges.

Notes

  • Serve immediately for the best crunch. If making ahead, prepare the shrimp and guacamole separately and assemble just before serving.
  • Use grilled shrimp for a smoky flavor.
