For the Shrimp:
- 12 medium shrimp, peeled and deveined
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp lime juice
For the Guacamole:
- 2 ripe avocados, mashed
- 1 small tomato, finely diced
- ¼ red onion, finely chopped
- 1 tbsp cilantro, chopped
- 1 tsp lime juice
- ½ tsp salt
For Assembly:
- 12 small crackers or tortilla chips
- Extra cilantro and lime wedges for garnish
Cook the shrimp: In a bowl, toss shrimp with olive oil, garlic powder, paprika, salt, and pepper. Heat a pan over medium heat and cook shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat and drizzle with lime juice.
Prepare the guacamole: In a bowl, mash the avocados and mix with tomato, red onion, cilantro, lime juice, and salt. Stir well.
Assemble the bites: Place a spoonful of guacamole onto each cracker or tortilla chip. Top with a cooked shrimp.
Garnish & serve: Sprinkle with extra cilantro and serve with lime wedges.

Serve immediately for the best crunch. If making ahead, prepare the shrimp and guacamole separately and assemble just before serving.
