Ingredients
  

  • 2 medium eggplants, diced into 1-inch cubes
  • 4 tablespoons extra virgin olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 cups ripe tomatoes, diced (or one 14-ounce can diced tomatoes)
  • ½ cup green olives, sliced
  • 2 tablespoons capers, drained
  • 3 tablespoons red wine vinegar
  • 2 tablespoons sugar
  • ¼ cup pine nuts (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish

Instructions
 

  • Sprinkle the diced eggplant with salt and let it sit for 20 minutes to remove excess moisture. Rinse and pat dry thoroughly.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Cook the eggplant in batches until golden brown and tender. Transfer to a plate.
  • Add the remaining olive oil to the skillet.
  • Sauté the onion and celery for about 8 minutes until softened.
  • Add the garlic and cook for another minute.
  • Stir in the tomatoes and tomato paste. Simmer for 10 minutes.
  • Mix in the olives, capers, pine nuts, and raisins if using.
  • Return the eggplant to the skillet and gently stir to combine.
  • In a small bowl, combine the vinegar and sugar until dissolved. Pour the mixture into the skillet.
  • Simmer for another 8–10 minutes until the sauce thickens and coats the vegetables.
  • Allow the Caponata to cool slightly before serving. It is especially delicious at room temperature or chilled.
