Ingredients
  

  • 4 chicken thigh quarters
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tbsp lemon juice
  • 1 tsp soy sauce (optional)

Instructions
 

Preheat

  • the oven to 375°F (190°C) or heat a grill to medium-high.

Prepare the chicken

  • Prepare the chicken by patting it dry with a paper towel.

Season

  • the chicken by mixing the olive oil, salt, pepper, paprika, garlic powder, onion powder, oregano, thyme, lemon juice, and soy sauce in a bowl. Rub the mixture evenly onto the chicken.

Cook the chicken:

  • For baking: Place the thighs on a baking tray lined with parchment paper. Bake for 35-40 minutes until the internal temperature reaches 165°F (75°C).
  • For grilling: Cook for about 6-8 minutes per side, flipping occasionally, until fully cooked.

Rest the chicken

  • Rest the chicken for 5 minutes before serving to allow juices to redistribute.

    Notes

    • You can marinate the chicken for up to 24 hours for deeper flavor.
    • Adjust seasoning according to taste preferences.
    • Use a meat thermometer to ensure the chicken is fully cooked.
