Ingredients
  

  • 6 large eggs
  • 3 tbsp mayonnaise
  • 1 tsp yellow or Dijon mustard
  • 1 tbsp finely chopped celery (optional)
  • 1 tbsp chopped fresh parsley or chives
  • Salt and black pepper to taste
  • Paprika for garnish (optional)

Instructions
 

  • Place eggs in a saucepan and cover with water.
  • Bring to a boil, then simmer for 10 minutes.
  • Drain and place eggs in ice water for 5 minutes.
  • Peel eggs and chop them into small pieces.
  • In a bowl, combine eggs, mayonnaise, mustard, celery, and herbs.
  • Season with salt and pepper.
  • Garnish with paprika if desired and serve chilled.
