Ingredients
  

For the Chicken

  • 1 kg chicken thighs, drumsticks, or wings
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder, optional

For the Aromatic Marinade

  • 5 garlic cloves
  • 1½-inch piece fresh ginger
  • 2 stalks lemongrass, tender inner portion
  • 4 shallots
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 2 tablespoons water

For the Coating

  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric powder

For Frying

  • Vegetable oil, enough for deep or shallow frying

Instructions
 

Prepare the Chicken

  • Pat the chicken pieces dry using paper towels.
    If using large bone-in pieces, make a few shallow cuts through the thickest parts.
    This helps the marinade penetrate deeper and allows the chicken to cook more evenly.

Prepare the Aromatics

  • Place the garlic, ginger, lemongrass, and shallots into a food processor.
    Add the soy sauce, lime juice, brown sugar, and water.
    Blend until you have a thick aromatic paste.

Season the Marinade

  • Transfer the paste to a large bowl.
    Add turmeric, coriander, cumin, black pepper, salt, and optional chili powder.
    Mix thoroughly.
    The marinade should be intensely fragrant and golden.

Marinate the Chicken

  • Add the chicken pieces to the marinade.
    Massage the mixture thoroughly into the chicken, making sure every piece is well coated.
    Cover the bowl or transfer everything to a food-safe resealable bag.
    Refrigerate for at least 2 hours.
    For deeper flavor, marinate for 6–8 hours.

Prepare the Coating

  • In a separate bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and turmeric.
    Mix thoroughly.

Coat the Chicken

  • Remove the chicken from the refrigerator.
    Allow excess marinade to drip off slightly.
    Place each piece into the flour mixture.
    Press the coating gently onto the chicken.
    For an extra-crispy crust, dip the chicken lightly into a little cold water and coat it again with the flour mixture.

Heat the Oil

  • Pour enough vegetable oil into a deep, heavy-bottomed pan for frying.
    Heat the oil to approximately 170–175°C (340–350°F).
    Use a cooking thermometer if possible for consistent results.

Fry the Chicken

  • Carefully lower the chicken into the hot oil in batches.
    Do not overcrowd the pan.
    Fry bone-in pieces for approximately 10–15 minutes, depending on size.
    Turn occasionally so the chicken browns evenly.
    Smaller wings or boneless pieces will cook more quickly.

Check for Doneness

  • The chicken should be deep golden brown and fully cooked.
    For food safety, chicken should reach an internal temperature of 74°C (165°F) in the thickest part.

Drain

  • Remove the fried chicken carefully using tongs or a slotted spoon.
    Place it on a wire rack set over a tray.
    Allow excess oil to drain.
    A wire rack helps preserve the crispness better than placing the chicken directly on paper towels.

Rest

  • Allow the chicken to rest for approximately 5 minutes before serving.
    This gives the juices time to redistribute.

Garnish

  • Arrange the chicken on a serving platter.
    Garnish with fresh cilantro, sliced red chili, fried shallots, and lime wedges.
    Serve immediately.
