Ingredients
  

  • 1 lb (450 g) sausage links or ground sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup bell peppers, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a pan and brown the sausage until cooked through. Remove and slice if using links.
  • In the same pan, sauté onion, garlic, bell peppers, and carrots until slightly tender.
  • Add diced potatoes, tomatoes, chicken broth, paprika, thyme, salt, and pepper.
  • Return the sausage to the mixture and stir well.
  • Transfer everything to a baking dish.
  • Cover with foil and bake for 30 minutes.
  • Remove foil, top with cheese if desired, and bake an additional 10–15 minutes until bubbly and golden.

  • Use smoked sausage for a deeper flavor.
  • You can swap potatoes with pasta or rice.
  • Add leafy greens like spinach at the end for extra nutrients.
  • For a creamy version, stir in ½ cup of heavy cream before baking.
  • Ground sausage works just as well as link sausage.
