- 1 lb (450 g) sausage links or ground sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 1 can (14 oz) diced tomatoes
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp black pepper
- 1 cup shredded cheddar cheese (optional)
Preheat your oven to 375°F (190°C).
Heat olive oil in a pan and brown the sausage until cooked through. Remove and slice if using links.
In the same pan, sauté onion, garlic, bell peppers, and carrots until slightly tender.
Add diced potatoes, tomatoes, chicken broth, paprika, thyme, salt, and pepper.
Return the sausage to the mixture and stir well.
Transfer everything to a baking dish.
Cover with foil and bake for 30 minutes.
Remove foil, top with cheese if desired, and bake an additional 10–15 minutes until bubbly and golden.
