For the Slow-Cooked Korean Beef
- 1.2 kg beef chuck roast
- ½ cup low-sodium soy sauce
- ¼ cup brown sugar
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon black pepper
- ½ cup beef broth or water
For the Soft Tacos
- 12 small soft flour or corn tortillas
- 2 cups shredded cabbage
- 1 medium carrot, thinly shredded
- 3 green onions, finely sliced
- 1 tablespoon sesame seeds
- Lime wedges for serving
Place the beef chuck roast inside a slow cooker. Trim away any large pieces of excess fat if necessary.
In a bowl, combine the soy sauce, brown sugar, sesame oil, rice vinegar, grated ginger, minced garlic, black pepper, and gochujang if using.
