Ingredients
  

  • 1/2 cup unseasoned rice vinegar
  • 3 tablespoons granulated sugar
  • 1 teaspoon fine sea salt
  • 1 small piece of kombu
  • 1/2 teaspoon mirin
  • A few drops of toasted sesame oil for specific non-sushi applications

Combine the Ingredients

  • Add the rice vinegar, sugar, and salt to a small saucepan.
    If using kombu, add a small piece to the mixture.

Warm the Mixture

  • Warm gently while stirring until the sugar and salt completely dissolve.
    Do not bring the vinegar to a rolling boil. Gentle heating is enough to dissolve the ingredients while preserving the vinegar's fresh flavor.

Remove from the Heat

  • Once the sugar and salt have dissolved, remove the saucepan from the heat.
    If you used kombu, remove it and discard it.
    Allow the sushi vinegar to cool to room temperature.

Taste and Adjust

  • Once cooled, taste a small amount.
    For a sweeter seasoning, add a little more sugar. For a sharper flavor, add a small amount of additional rice vinegar. If you prefer a saltier seasoning, add a tiny pinch of salt.
    Remember that the final flavor will be distributed throughout the rice, so the vinegar mixture should taste slightly stronger than you may expect when tasted by itself.

Season Sushi Rice

  • For best results, use freshly cooked Japanese short-grain or sushi rice.
    Transfer the hot rice to a wide bowl or shallow dish.
    Drizzle the sushi vinegar gradually over the rice while gently folding it with a rice paddle or spatula.
    Avoid aggressively stirring or crushing the rice grains.

Cool the Rice

  • Continue gently folding the rice while allowing steam to escape.
    The goal is to cool the rice while evenly distributing the vinegar.
    Once the rice reaches a suitable temperature and has a glossy appearance, it is ready to use.

Store Extra Sushi Vinegar

  • If you have leftover sushi vinegar, transfer it to a clean, airtight glass bottle or jar.
    Refrigerate and use it within a reasonable period for best quality.
    Always use clean utensils when removing vinegar from the container

  • Use unseasoned rice vinegar: Avoid seasoned rice vinegar because it already contains sugar and salt.
