Ingredients
  

  • 4 large fresh artichokes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup water
  • Lemon wedges for serving

Instructions
 

  • Trim the stems and remove any tough outer leaves. Cut the artichokes in half lengthwise and scoop out the fuzzy choke from the center.
  • Place the artichoke halves in a large bowl. Drizzle with olive oil and lemon juice. Add garlic, oregano, salt, and black pepper. Toss well to coat evenly.
  • Place the artichokes cut-side down in a baking dish. Pour water into the bottom of the dish to help steam and tenderize them during roasting.
  • Cover tightly with aluminum foil and roast in a preheated oven at 400°F (200°C) for 35 minutes.
  • Remove the foil and continue roasting for 10 minutes until lightly browned and tender.
  • Transfer to a serving platter and garnish with fresh lemon wedges. Serve warm.
