Ingredients
  

  • 2 sirloin steaks (about 1 inch thick)
  • Salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic (minced or smashed)
  • 1 tsp fresh rosemary or thyme (optional)
  • 1 tbsp chopped parsley (for garnish)

Instructions
 

  • Bring Steak to Room Temperature
    Let the steaks sit at room temperature for 20–30 minutes before cooking. This ensures even cooking throughout.
  • Season Generously
    Pat steaks dry. Season both sides with salt and pepper. Don’t be shy—this builds your crust.
  • Sear in a Hot Pan
    Heat olive oil in a cast-iron skillet over high heat. Add the steaks and sear for 3–4 minutes per side until a golden crust forms.
  • Add Garlic Butter
    Reduce heat to medium. Add butter, garlic, and herbs to the pan. Tilt the pan and spoon melted butter over the steak continuously for 1–2 minutes.
  • Let It Rest
    Remove steaks from heat and rest for 5–7 minutes. This locks in the juices.
  • Slice and Serve
    Garnish with chopped parsley and serve with your favorite sides like mashed potatoes or roasted veggies.
