Ingredients
  

For the Filling

  • 2½ pounds yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1½ pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2½ cups low-sodium beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1 tablespoon fresh parsley, chopped

For the Cheese

  • 1 cup shredded Gruyère cheese
  • ¼ cup shredded Parmesan cheese

For the Pastry

  • 1 sheet frozen puff pastry, thawed
  • 1 large egg
  • 1 tablespoon water
  • 1 teaspoon sesame seeds or fresh thyme, optional

Instructions
 

Prepare the Onions

  • Thinly slice the onions from root to stem.
    Try to keep the slices relatively uniform so they cook evenly.

Start Caramelizing

  • Heat a large oven-safe skillet over medium heat.
    Add the butter and olive oil.
    Once the butter melts, add the sliced onions.
    Season lightly with salt.
    Cook for approximately 10 minutes, stirring occasionally, until the onions begin to soften.

Slowly Caramelize the Onions

  • Reduce the heat to medium-low.
    Continue cooking the onions for approximately 25–35 minutes, stirring every few minutes.
    The onions will gradually become soft, golden brown, and deeply caramelized.
    If the skillet becomes dry or the onions begin sticking excessively, add a tablespoon or two of water and scrape the bottom gently.

Cook the Chicken

  • Push the caramelized onions toward one side of the skillet.
    Add the chicken pieces to the empty area.
    Cook for approximately 5–7 minutes, turning occasionally, until the outside is lightly browned.
    The chicken does not need to be fully cooked at this stage because it will continue cooking in the oven.

Add Garlic

  • Stir the chicken and onions together.
    Add the minced garlic.
    Cook for approximately 30 seconds, just until fragrant.

Make the Filling

  • Sprinkle the flour evenly over the chicken and onions.
    Stir well to coat everything.
    Cook for approximately 1 minute.
    Gradually pour in the broth while stirring constantly.
    Add Worcestershire sauce, Dijon mustard, thyme, black pepper, and bay leaf.

Add the Cheese

  • Reduce the heat to low.
    Stir in approximately half of the Gruyère and Parmesan cheese.
    Allow the cheese to melt into the filling.
    The mixture should be creamy and thick enough to support the pastry.

Prepare the Puff Pastry

  • Preheat the oven to 400°F (200°C).
    Lightly roll the thawed puff pastry if necessary so that it is large enough to cover the skillet.
    Place the pastry carefully over the filling.
    Tuck or fold the edges around the inside of the skillet.

Vent the Pastry

  • Use a sharp knife to make several small cuts in the center of the pastry.
    These vents allow steam to escape while the pot pie bakes.

Bake

  • Transfer the skillet to the preheated oven.
    Bake for approximately 20–25 minutes, or until the pastry is puffed and deeply golden brown.
    If the pastry browns too quickly, loosely cover it with foil during the final portion of baking.

Rest

  • Remove the skillet from the oven.
    Allow the pot pie to rest for approximately 10 minutes before serving.
    The filling will continue to thicken slightly as it cools.

Serve

  • Spoon generous portions of the French onion filling onto plates.
    Make sure each serving gets plenty of golden pastry and melted cheese.
    Garnish with fresh parsley or thyme.

Notes

  • Caramelize slowly: The onions are the foundation of the dish, so don't rush this step.
  • Use an oven-safe skillet: A cast-iron or other oven-safe skillet is ideal.
  • Puff pastry: Thaw it according to the package instructions but keep it chilled until ready to use.
  • Cheese: Gruyère gives the most recognizable French onion flavor.
  • Broth: Beef broth creates a deeper French onion profile, while chicken broth produces a lighter filling.
  • Chicken: Thighs remain especially juicy, but chicken breast can also be used.
  • Resting: Allow the pot pie to rest before serving to prevent the filling from being excessively runny.
  • Pastry: Keep the puff pastry cold for the best rise and flakiness.
