Beef Filling
- 1½ pounds lean ground beef
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika

- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
Casserole
- 3 cups red enchilada sauce
- 12 small corn tortillas
- 1 can black beans, 15 ounces, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 small can diced green chiles
- 2 cups shredded Mexican-blend cheese
- 1 cup shredded cheddar cheese
- ½ cup chopped fresh cilantro
Brown the Beef
Heat a large skillet over medium-high heat. Add the ground beef and chopped onion.Cook for approximately 6–8 minutes, breaking the beef apart with a spoon, until browned and cooked through.Drain excess grease if necessary.
Add Seasonings

Prepare the Slow Cooker
