Ingredients
  

  • 2 lbs beef chuck, cut into cubes
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 3 celery stalks, chopped
  • 1 onion, chopped
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions
 

  • Toss beef cubes with flour, salt, and pepper.
  • Heat oil in a skillet and sear beef until browned.
  • Transfer beef to the slow cooker.
  • Add carrots, potatoes, celery, and onion.
  • Stir in broth, tomato paste, Worcestershire sauce, thyme, and bay leaves.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours.
  • Remove bay leaves and adjust seasoning before serving.
