- 6 cups water
- 4 black tea bags, or 4 teaspoons loose-leaf black tea
- 2 cups whole milk
- 4–6 green cardamom pods, lightly crushed
- 4–5 whole cloves
- 6–8 black peppercorns, lightly crushed
- 1-inch piece fresh ginger, thinly sliced or grated
- 2–4 tablespoons granulated sugar, honey, or maple syrup
- 1 teaspoon vanilla extract, optional
- 1 small star anise, optional
- ¼ teaspoon ground nutmeg, optional
Add the Ingredients
Place the water, cardamom, cinnamon sticks, cloves, black peppercorns, ginger, and optional star anise into the slow cooker.Cover and cook on Low for about 1½ to 2 hours so the spices have plenty of time to infuse the water.
Strain and Serve
Remove the tea bags and strain the chai through a fine-mesh strainer to remove the whole spices and ginger. Pour into warm mugs and serve immediately. For an extra-special presentation, sprinkle a tiny pinch of cinnamon or nutmeg over each cup.
- Tea choice: Assam or another strong black tea works especially well because it stands up to the milk and spices.
- Milk: Whole milk produces the richest result, but 2% or plant-based milk can also be used.
- Sweetness: Start with less sweetener and add more after tasting.
- Fresh ginger: Fresh ginger provides a brighter and more aromatic flavor than dried ginger.
- Tea timing: Add the tea toward the end to reduce bitterness.
- Spice strength: The longer the spices infuse, the more pronounced their flavor becomes.
- Straining: Always strain the chai before serving if you use loose spices.
- Serving temperature: Serve hot but avoid allowing the milk to boil vigorously.
