For the Chicken
- 2½ pounds boneless, skinless chicken breasts or chicken thighs
- 2 tablespoons olive oil or melted butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried parsley
For the Gravy
- 2 cups low-sodium chicken broth
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 teaspoon Dijon mustard
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon black pepper
- Salt, to taste
Prepare the Chicken
Pat the chicken dry with paper towels.In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, thyme, and parsley.Rub the seasoning mixture evenly over both sides of the chicken.
Sear the Chicken
Heat olive oil or butter in a large skillet over medium-high heat.Sear the chicken for approximately 2–3 minutes per side, just until lightly browned.The chicken does not need to be fully cooked at this stage.Transfer it to the slow cooker.
Prepare the Gravy Base
In the same skillet, reduce the heat to medium.Add the butter and chopped onion. Cook for approximately 2–3 minutes until the onion begins to soften.Add the minced garlic and cook for another 30 seconds.Whisk in the flour and cook for about 1 minute.
Add the Liquid
Slowly whisk in the chicken broth, making sure there are no large lumps.Add the Worcestershire sauce, Dijon mustard, thyme, rosemary, and black pepper.Continue whisking until the mixture begins to thicken slightly.
Transfer to the Slow Cooker

Slow Cook the Chicken

Finish the Gravy
Once the chicken is cooked, carefully remove it from the slow cooker and place it on a serving plate.Stir the gravy thoroughly.If you prefer a creamier gravy, stir in the heavy cream or half-and-half.Taste and adjust the seasoning with salt and pepper.If the gravy is thinner than desired, transfer it to a saucepan and simmer gently for a few minutes until it reaches your preferred consistency.
Serve
