Ingredients
  

For the Chicken

  • 2½ pounds boneless, skinless chicken breasts or thighs
  • ¼ cup fresh lime juice
  • 1 tablespoon lime zest
  • ¼ cup fresh cilantro, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup low-sodium chicken broth

For Garnishing

  • ¼ cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • Sliced avocado, optional
  • Thinly sliced jalapeño, optional
  • Fresh lime zest, optional

Instructions
 

Prepare the Chicken

  • Pat the chicken breasts or thighs dry with paper towels.
    Trim away any excess fat or connective tissue.

Make the Lime-Cilantro Mixture

  • In a medium bowl, combine the fresh lime juice, lime zest, chopped cilantro, minced garlic, olive oil, cumin, paprika, chili powder, onion powder, salt, and black pepper.
    Whisk until well combined.

Prepare the Slow Cooker

  • Arrange the sliced onion across the bottom of the slow cooker.
    Place the chicken on top of the onions.

Add the Seasoning Mixture

  • Pour the lime-cilantro mixture evenly over the chicken.
    Add the chicken broth around the sides.
    Make sure the chicken is coated well with the seasoning mixture.

Slow Cook

  • Cover the slow cooker with the lid.
    Cook on LOW for approximately 3–4 hours, depending on the size and type of chicken.
    The chicken should reach an internal temperature of 165°F (74°C).
    Avoid overcooking chicken breasts because they can become dry when left in the slow cooker for too long.

Rest the Chicken

  • Carefully transfer the cooked chicken to a plate or cutting board.
    Allow it to rest for approximately 5–10 minutes.
    This gives the juices time to redistribute.

Slice or Shred

  • Slice the chicken into strips or shred it with two forks.
    For tacos, burrito bowls, and sandwiches, shredded chicken works particularly well.

Add Fresh Cilantro and Lime

  • Return the sliced or shredded chicken to some of the cooking juices.
    Add a little additional fresh cilantro and a squeeze of lime juice.
    Taste and adjust the salt if necessary

Serve

  • Serve the chicken immediately with your favorite sides.
    It is delicious over steamed rice with black beans, corn, avocado, and extra cilantro.
    For tacos, spoon the chicken into warm tortillas and top with cabbage, avocado, salsa, or sliced jalapeño

Notes

  • Chicken breasts or thighs: Both work well. Thighs are more forgiving, while breasts provide a leaner option.
  • Use fresh lime juice: Freshly squeezed lime provides a brighter flavor than bottled juice.
  • Add cilantro at the end: Some fresh cilantro added after cooking provides a brighter herbal flavor.
