For the Chicken

  • 2 pounds boneless skinless chicken thighs or breasts
  • 1½ pounds baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • Salt and black pepper to taste

Parmesan Garlic Sauce

  • 4 tablespoons butter
  • 6 garlic cloves, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon dried parsley
  • ½ teaspoon thyme
  • 1 tablespoon cornstarch (optional for thickening)
  • Fresh parsley for garnish

Instructions
 

  • Season the chicken with paprika, Italian seasoning, onion powder, salt, and pepper.
  • Place halved baby potatoes into the bottom of the slow cooker.
  • Arrange the seasoned chicken over the potatoes.
  • In a saucepan, melt butter and sauté garlic until fragrant.
  • Add chicken broth, heavy cream, Parmesan cheese, parsley, and thyme. Stir until smooth.
  • Pour the sauce evenly over the chicken and potatoes.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • If a thicker sauce is desired, stir in a cornstarch slurry during the last 20 minutes.
  • Garnish with chopped parsley and extra Parmesan before serving.
