- 1 (2-pound) pork tenderloin
- 1 cup chicken broth
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- 2 tbsp honey or brown sugar
- 2 tsp Dijon mustard
- 2 tsp garlic powder
- 2 tsp onion powder
- 2 tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt
- 1 tsp dried thyme
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, sliced
In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, pepper, and thyme.
Rub the spice mixture evenly over the pork tenderloin.
Heat olive oil in a pan over medium-high heat and sear the pork on all sides until browned (about 2-3 minutes per side).
Place sliced onions and minced garlic in the bottom of the slow cooker.
Lay the pork tenderloin on top of the onions.
In a separate bowl, whisk together chicken broth, soy sauce, balsamic vinegar, honey, and Dijon mustard. Pour over the pork.
Cover and cook on low for 4-6 hours or until the pork reaches an internal temperature of 145°F (63°C).
Remove pork from the slow cooker and let it rest for 5 minutes before slicing.
Serve with the cooking juices and your favorite side dishes.

You can skip searing the pork, but it adds a richer flavor.

For a thicker sauce, remove the liquid from the slow cooker and simmer in a pan with cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water).
