  • 1 can (14 oz) sauerkraut, drained
  • 2 cups shredded Swiss cheese
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup Thousand Island dressing
  • 1/2 cup sour cream
  • Rye bread cubes or crackers for serving

Instructions

  • Prepare the ingredients: Chop the corned beef and drain the sauerkraut thoroughly.
  • In a large bowl, combine cream cheese, sour cream, and Thousand Island dressing until smooth.
  • Stir in corned beef, sauerkraut, and Swiss cheese. Mix until well blended.
  • Transfer the mixture to a slow cooker.
  • Cover and cook on low for 2 hours, stirring occasionally until the cheese is melted and bubbly.
  • Serve warm with rye bread cubes, crackers, or pretzels.

Notes

  • For extra flavour, use freshly sliced deli corned beef instead of canned.
  • Drain the sauerkraut completely to avoid excess liquid in the dip.
  • Shred your own Swiss cheese for a smoother texture.
  • Add a touch of caraway seeds for authentic Reuben flavour.
  • Leftovers can be stored in the fridge and reheated in the slow cooker or microwave.
