Slow Cooker Shepherd’s Pie

A classic Shepherd’s Pie made easy in the slow cooker with flavorful meat, veggies, and creamy mashed potatoes.

Ingredients
  

  • 1 lb ground beef or lamb
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth
  • 3 cup mashed potatoes (prepared separately)
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions
 

  • In a skillet over medium heat, cook ground beef or lamb until browned. Drain excess fat.
  • Add onion, garlic, and carrots, and sauté for 3–5 minutes until softened.
  • Transfer the mixture to the slow cooker. Add peas, corn, tomato paste, Worcestershire sauce, thyme, rosemary, beef broth, salt, and pepper.
  • Stir well, cover, and cook on low for 6 hours.
  • Spread the mashed potatoes evenly over the meat mixture in the slow cooker.
  • Sprinkle cheese on top, if using, and cook for another 10–15 minutes until melted.
  • Serve hot and enjoy!

Notes

  • For a richer flavor, use lamb instead of beef.
  • You can prepare mashed potatoes ahead of time for convenience.
