Ingredients
  

For the Curry

  • 2 tablespoons vegetable oil or olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cut into bite-sized cubes
  • 2 cups cauliflower florets
  • 1 cup green beans, trimmed and chopped
  • 1 cup frozen green peas
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1 can (14 oz / 400 g) diced tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1½ teaspoons ground cumin
  • 1½ teaspoons ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon garam masala
  • ½ teaspoon chili powder, optional
  • 1 tablespoon fresh lemon juice

For Garnishing

  • Fresh cilantro, chopped
  • Freshly sliced green chili, optional
  • Lemon wedges
  • A little coconut cream or yogurt, optional

Instructions
 

Prepare the Vegetables

  • Wash and prepare all the vegetables before starting. Cut the potatoes and carrots into similarly sized pieces so they cook evenly. Keep the cauliflower florets moderately large because they soften during slow cooking.

Build the Flavor Base

  • Heat the oil in a skillet over medium heat. Add the chopped onion and cook for 4–5 minutes until softened. Add the garlic and ginger and cook for another minute.
    Add the cumin, coriander, curry powder, turmeric, paprika, and chili powder. Stir for about 30 seconds until fragrant. This quick step helps release the aroma of the spices and gives the finished curry a deeper flavor.

Transfer to the Slow Cooker

  • Place the potatoes, carrots, cauliflower, bell pepper, green beans, peas, and chickpeas into the slow cooker.
    Pour in the sautéed onion and spice mixture. Add the diced tomatoes, tomato paste, coconut milk, and vegetable broth. Season with salt and black pepper.

Finish the Curry

  • About 15–20 minutes before serving, stir in the garam masala and lemon juice. Taste and adjust the salt, chili, or lemon juice according to your preference.
    If the curry is thinner than you prefer, leave the lid slightly open for a short period or cook on HIGH uncovered for a few minutes while stirring occasionally.

Garnish and Serve

  • Turn off the slow cooker and allow the curry to rest for approximately 5 minutes.
    Garnish with fresh cilantro and sliced green chili. Serve hot with basmati rice, naan, roti, chapati, or another favorite flatbread.

Notes

  • Vegetable choices: You can replace or add vegetables according to the season and what you have available.
  • Coconut milk: Full-fat coconut milk creates the creamiest result, while light coconut milk produces a thinner curry.
  • Chickpeas: Canned chickpeas are convenient, but properly cooked dried chickpeas can also be used.
  • Spice level: Reduce or increase the chili powder according to your preference.
  • Potatoes: Cut potatoes into relatively small, even pieces so they cook thoroughly.
  • Consistency: Slow cooker curry can vary in thickness depending on the vegetables and slow cooker model.
  • Freshness: Adding lemon juice near the end brightens the rich flavors.
  • Leftovers: The curry often tastes even better the next day after the spices have had additional time to blend.
