Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 can (14 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprikaSalt and pepper to taste
  • 2 cups elbow macaroni
  • 1 cup frozen peas (optional)
  • 1 tbsp olive oil
  • 1 tbsp olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  • Add the diced onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes until the vegetables are softened.
  • Stir in the diced tomatoes, tomato paste, beef broth, oregano, basil, paprika, salt, and pepper. Bring the mixture to a simmer.
  • Add the elbow macaroni to the pot and stir well. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender.
  • If using, stir in the frozen peas during the last 2 minutes of cooking.
  • Remove the pot from heat and let it rest for 5 minutes. Serve hot and enjoy!

Notes

  • Feel free to substitute ground turkey or chicken for a lighter version.
  • Adjust the seasoning to your taste; a pinch of red pepper flakes adds a nice kick.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
