- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 1 can (14 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprikaSalt and pepper to taste
- 2 cups elbow macaroni
- 1 cup frozen peas (optional)
- 1 tbsp olive oil
- 1 tbsp olive oil
Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
Add the diced onion, garlic, carrots, and celery to the pot. Sauté for 5 minutes until the vegetables are softened.
Stir in the diced tomatoes, tomato paste, beef broth, oregano, basil, paprika, salt, and pepper. Bring the mixture to a simmer.
Add the elbow macaroni to the pot and stir well. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender.
If using, stir in the frozen peas during the last 2 minutes of cooking.
Remove the pot from heat and let it rest for 5 minutes. Serve hot and enjoy!
