For the Potatoes:
- 500g baby potatoes
- 2 tbsp olive oil
- Salt and pepper to taste
For the Buffalo Sauce Mix:
- ¼ cup buffalo sauce
- 2 tbsp melted butter
For the Dressing:
- ½ cup mayonnaise
- 2 tbsp sour cream or Greek yogurt
- 1 tbsp lemon juice
- 1 tsp garlic powder
For Toppings:
- ½ cup chopped celery
- ¼ cup chopped green onions
- ¼ cup crumbled blue cheese (optional)
- Fresh parsley
Boil baby potatoes in salted water until fork-tender; drain and cool slightly.
Preheat oven to 220°C (425°F).
Place potatoes on a baking tray and gently smash them using a fork or glass.

Mix buffalo sauce with melted butter.
Toss hot smashed potatoes in the buffalo mixture.

Top with celery, green onions, blue cheese, and parsley.
