Ingredients
  

For the Potatoes:

  • 500g baby potatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste

For the Buffalo Sauce Mix:

  • ¼ cup buffalo sauce
  • 2 tbsp melted butter

For the Dressing:

  • ½ cup mayonnaise
  • 2 tbsp sour cream or Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garlic powder

For Toppings:

  • ½ cup chopped celery
  • ¼ cup chopped green onions
  • ¼ cup crumbled blue cheese (optional)
  • Fresh parsley

Instructions
 

  • Boil baby potatoes in salted water until fork-tender; drain and cool slightly.
  • Preheat oven to 220°C (425°F).
  • Place potatoes on a baking tray and gently smash them using a fork or glass.
  • Drizzle with olive oil, season with salt and pepper.
  • Roast for 25–30 minutes until crispy and golden.
  • Mix buffalo sauce with melted butter.
  • Toss hot smashed potatoes in the buffalo mixture.
  • In a bowl, whisk together mayonnaise, sour cream, lemon juice, and garlic powder.
  • Top with celery, green onions, blue cheese, and parsley.
  • Serve warm or at room temperature.
