  • 1 whole bologna chub (3-5 pounds)
  • 1/4 cup yellow mustard (for binding)
  • 1/4 cup BBQ rub (your favorite blend)
  • 1/2 cup BBQ sauce (optional for glazing)

Prepare the Bologna :

  • Remove the plastic casing from the bologna chub. Using a sharp knife, score the surface of the bologna in a crisscross pattern, about 1/4 inch deep.

Apply the Binder and Rub :

  • Coat the bologna evenly with yellow mustard to help the seasoning stick. Generously apply the BBQ rub, ensuring it covers all sides.

Preheat the Smoker :

  • Set your smoker to 225°F (107°C) and add your favorite wood chips (e.g., hickory, cherry, or apple) for a mild smoky flavor.

Smoke the Bologna :

  • Place the bologna directly on the smoker grates. Smoke for 2-3 hours, turning occasionally to ensure even cooking and smoking.

Glaze (Optional) :

  • In the last 30 minutes of smoking, brush the bologna with BBQ sauce for a caramelized glaze.

Slice and Serve :

  • Remove the smoked bologna from the smoker and let it rest for 10 minutes. Slice it into thick or thin pieces and serve as desired.
