For the Chipotle Chili
- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 tablespoons tomato paste
- 1 cup tomato sauce
- 1 cup diced tomatoes
- 2 chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon adobo sauce
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- ½ cup beef broth
For the Chili Dogs
- 6 beef hot dogs
- 6 hot dog buns
- ½ cup diced white onions
- Sliced jalapeños
- Fresh cilantro, chopped
- Crushed tortilla chips (optional)
Heat olive oil in a large skillet over medium heat.
Add onions and cook until softened, about 4 minutes.
Stir in garlic and cook for 30 seconds.
Add ground beef and cook until browned, breaking it apart as it cooks.
Drain excess fat if necessary.
Mix in tomato paste, tomato sauce, diced tomatoes, chipotle peppers, adobo sauce, chili powder, smoked paprika, cumin, oregano, salt, pepper, and beef broth.
Add kidney beans if using, then simmer for 20–25 minutes until thickened.
Meanwhile, grill or pan-cook the hot dogs until heated through and lightly charred.
Place each hot dog in a bun, spoon generous amounts of chipotle chili over the top, then finish with cheddar cheese, onions, jalapeños, cilantro, and any additional toppings. Serve immediately.
- Beef hot dogs provide the richest flavor.
- Chipotle peppers add smoky heat; adjust the amount to your spice preference.
- Simmer the chili until thick so it stays on the hot dogs.
- Toasting the buns helps prevent sogginess.
- Freshly shredded cheese melts better than pre-shredded cheese.
- Beans are optional for a classic chili dog texture.
- Leftover chili tastes even better the next day.
- Serve immediately for the best flavor and texture.
