  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 1 tablespoon lemon juice
  • Chopped parsley
  • Lemon wedges

Instructions
 

  • In a small bowl, combine smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, chili powder, and cayenne pepper.
  • Pat the pork chops dry with paper towels. Rub with olive oil and lemon juice, then coat generously with the spice mixture.
  • Let the pork chops rest for 30 minutes at room temperature or refrigerate for up to 4 hours.
  • Heat the grill to medium-high heat (about 400°F / 200°C). Oil the grates lightly.
  • Place the pork chops on the grill and cook for 4–6 minutes per side, depending on thickness.
  • Cook until the internal temperature reaches 145°F (63°C).
  • Remove from the grill and rest for 5 minutes.
  • Sprinkle with parsley and serve with lemon wedges.
