- 1 teaspoon lime juice
- 1–2 tablespoons warm water, as needed

Prepare the Dressing
Add soy sauce, sesame oil, rice vinegar, honey or maple syrup, peanut butter or tahini, grated ginger, garlic, and lime juice to a small bowl.Whisk until smooth and creamy.Add warm water, one tablespoon at a time, until the dressing reaches a pourable consistency. For a spicy version, add chili flakes or a small amount of chili oil.
Cook the Soba Noodles
Bring a large pot of water to a boil.Add the soba noodles and cook according to the package instructions, usually for approximately 4–5 minutes.Avoid overcooking because soba noodles can become soft quickly.
Rinse the Noodles
Drain the noodles immediately.Rinse them thoroughly under cold running water while gently separating them with your fingers. This step removes excess starch and stops the cooking process.Drain very well and set aside.
Prepare the Vegetables
While the noodles cook, wash and prepare the vegetables.Thinly slice the cucumber and bell pepper. Julienne the carrot and shred the cabbage.Cook the edamame according to the package directions and allow it to cool.
Assemble the Bowl
Divide the chilled soba noodles among four serving bowls.Arrange the cucumber, carrot, bell pepper, cabbage, bean sprouts, edamame, green onions, and avocado around the noodles.Keep the vegetables in separate sections for a colorful restaurant-style presentation or toss everything together for a more casual bowl.
Garnish
Sprinkle toasted sesame seeds over each bowl.Add nori strips, sliced green onions, cilantro, crushed peanuts, or furikake if desired.Serve immediately or chill briefly before serving.
- Check the soba ingredients: Some soba noodles contain a mixture of buckwheat and wheat flour.
- Do not overcook the noodles: Soba should remain tender but pleasantly firm.
- Rinse thoroughly: Cold rinsing removes excess starch and improves the noodle texture.
- Drain well: Excess water can dilute the dressing.
- Use fresh vegetables: Crisp vegetables provide the best contrast to the soft noodles.
- Adjust the dressing: Add more soy sauce, vinegar, sweetness, or sesame oil according to your taste.
- Add avocado last: It is best added shortly before serving to maintain its fresh appearance.
