For the Ribs:
- 1.5–2 kg pork ribs (baby back or spare ribs)
For Dry Rub:
- 2 tbsp brown sugar
- 1 tbsp paprika
- 1 tsp black pepper
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper (optional)
For BBQ Sauce:
- 1 cup barbecue sauce (store-bought or homemade)
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp Worcestershire sauce
Remove the membrane from the back of the ribs for better tenderness.
Mix all dry rub ingredients and coat the ribs generously on both sides. Let marinate for at least 2 hours (overnight for best results).
Set up your grill for indirect heat (low temperature around 120–150°C / 250–300°F).
Place ribs on the grill away from direct heat. Cover and cook slowly for about 2 hours, turning occasionally.
Mix barbecue sauce with honey, vinegar, and Worcestershire sauce.
Brush ribs with sauce and move them to direct heat. Grill for 10–15 minutes, turning and basting until caramelized.
Let ribs rest for 5–10 minutes before slicing.
