  • 2 cups dried brown beans (or pinto beans)
  • 1 ham hock or 2 cups diced cooked ham
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 6 cups water or chicken broth
  • 1 tsp salt (adjust later)
  • 1 tsp black pepper
  • ½ tsp paprika (optional)
  • 1 bay leaf

Instructions
 

  • Rinse and soak dried beans in water overnight. Drain before cooking.
  • In a large pot, add soaked beans, ham hock, and water or broth.
  • Bring to a boil, then reduce heat to a gentle simmer.
  • Add onion, garlic, bay leaf, pepper, and paprika.
  • Cover and cook for 1.5 to 2 hours, stirring occasionally, until beans are tender.
  • Remove ham hock, shred meat, and return to pot. Add salt if needed.
  • Mash a few beans to naturally thicken the mixture.
  • Serve with cornbread, rice, or biscuits.
