Ingredients
  

  • 8 medium ripe but firm peaches
  • 2 cups granulated sugar
  • 2 cups apple cider vinegar
  • 1 cup water
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice berries
  • 1 teaspoon vanilla extract (optional)

Instructions
 

  • Wash the peaches thoroughly.
  • Blanch the peaches in boiling water for 30–45 seconds, then transfer them to an ice bath.
  • Peel the skins and leave the peaches whole or halve them if preferred.
  • In a large saucepan, combine the sugar, vinegar, water, cinnamon sticks, cloves, allspice, peppercorns, and lemon peel.
  • Bring the mixture to a gentle boil, stirring until the sugar dissolves completely.
  • Reduce the heat and carefully add the peaches.
  • Simmer gently for 8–10 minutes until the peaches are just tender but still hold their shape.
  • Pour the hot pickling syrup over the peaches, ensuring they are fully covered.
  • Seal the jars and cool completely. Refrigerate for at least 24 hours before serving for the best flavor.
