Ingredients
  

For Marinade:

  • 1 kg chicken (bone-in pieces)
  • 2 cups buttermilk
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

For Coating:

  • 2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional)
  • 1 tsp onion powder

For Frying:

  • Oil (for deep frying)

Instructions
 

  • In a large bowl, mix buttermilk, salt, pepper, paprika, and garlic powder. Add chicken pieces and coat well. Cover and refrigerate for at least 4 hours (overnight preferred).
  • In another bowl, combine flour, cornstarch, and all spices.
  • Remove chicken from marinade, let excess drip off, then dredge in flour mixture. Press firmly to create a thick coating.
  • Heat oil in a deep pan to 170–175°C (340–350°F).
  • Carefully place chicken in hot oil. Fry in batches for 12–15 minutes, turning occasionally until golden brown and fully cooked.
  • Remove and place on paper towels. Let rest for 5 minutes before serving.
