For the Spaghetti Squash
- 1 medium spaghetti squash, approximately 3 pounds
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Carbonara
- 6 ounces bacon, diced
- 3 large eggs
- 2 large egg yolks
- ¾ cup freshly grated Parmesan cheese
- 1 teaspoon freshly cracked black pepper
- 2 cloves garlic, minced, optional
- ¼ teaspoon salt, if needed

Roast the Spaghetti Squash
Preheat the oven to 400°F (200°C).Carefully cut the spaghetti squash in half lengthwise.Scoop out the seeds and stringy center.Brush the cut sides with olive oil and season with salt and black pepper.Place the squash cut-side down on a baking sheet.Roast for approximately 35–45 minutes, depending on its size, until the flesh is tender.Allow it to cool for a few minutes
Create the Squash Strands
Use a fork to gently scrape the flesh into long spaghetti-like strands.For particularly moist squash, place the strands in a colander and allow excess moisture to drain for several minutes.Set aside.
Prepare the Egg and Cheese Mixture
In a medium bowl, whisk together the eggs and egg yolks.Add the freshly grated Parmesan and black pepper.Whisk until smooth and well combined.Set aside.
Cook the Bacon
