Cheesy Spaghetti Squash
- 1 large spaghetti squash, approximately 3–4 pounds
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Chicken
- 2 large boneless, skinless chicken breasts
- ½ cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 cup Italian-seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
For the Sauce and Cheese
- 2½ cups marinara sauce
- 1½ cups shredded mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
- 2 tablespoons fresh basil or parsley, chopped
- ¼ teaspoon red pepper flakes
Roast the Spaghetti Squash
Preheat the oven to 400°F (200°C).Carefully cut the spaghetti squash in half lengthwise.Scoop out the seeds and stringy center.Brush the cut sides with olive oil and season with salt and black pepper.Place the squash cut-side down on a baking sheet.Roast for approximately 35–45 minutes, depending on its size, until tender.Allow it to cool slightly before scraping the flesh into long spaghetti-like strands with a fork.
Prepare the Chicken
Place each chicken breast between two pieces of plastic wrap or parchment paper.Gently pound the chicken to approximately ½-inch thickness.If the breasts are very large, cut them in half horizontally to create four evenly sized cutlets.Pat the chicken dry with paper towels.
Prepare the Breading
