Ingredients
  

  • 6 large eggs
  • ½ cup milk or cream
  • 1 cup fresh spinach, finely chopped
  • ½ cup crumbled feta cheese
  • ¼ cup finely chopped onion or scallions
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or parsley, chopped
  • ½ teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions
 

  • Preheat oven to 180°C (350°F) and grease a muffin tin.
  • Heat olive oil in a pan and sauté onions until soft.
  • Add spinach and cook until wilted; remove from heat and cool slightly.
  • In a bowl, whisk eggs, milk, salt, pepper, and oregano.
  • Pour evenly into muffin cups, filling about ¾ full.
  • Bake for 18–22 minutes until set and lightly golden.
  • Cool slightly before removing and serving.

Notes

  • Fresh spinach works best, but frozen can be used if well-drained.
  • Feta adds saltiness—adjust seasoning accordingly.
  • These egg bites are naturally low-carb.
  • Silicone muffin pans make removal easier.
  • Best texture when slightly cooled.
