Ingredients
  

  • 1 cup uncooked rice
  • 2 cups vegetable or chicken broth
  • 1 cup tomato sauce
  • 1 small onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Heat olive oil in a pan. Cook onion, garlic, and bell pepper until soft.
  • In a baking dish, combine rice, cooked vegetables, broth, tomato sauce, paprika, cumin, salt, and pepper.
  • Cover with foil and bake for 35–40 minutes until rice is tender.
  • Sprinkle cheese on top if desired and bake for 5 more minutes.
  • Garnish with parsley and serve warm.

Notes

  • Use long-grain rice for best texture.
  • Brown rice requires longer cooking.
  • Add extra broth if needed.
  • Fresh tomatoes can replace sauce.
  • Cover dish tightly.
  • Cheese is optional.
