- 1 cup uncooked rice
- 2 cups vegetable or chicken broth
- 1 cup tomato sauce
- 1 small onion (chopped)
- 1 bell pepper (chopped)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon black pepper
- 2 tablespoons chopped parsley
Preheat oven to 180°C (350°F).
Heat olive oil in a pan. Cook onion, garlic, and bell pepper until soft.
In a baking dish, combine rice, cooked vegetables, broth, tomato sauce, paprika, cumin, salt, and pepper.
