Preheat oven to 425°F (220°C).
Place the turkey breast-side down on a cutting board.
Using kitchen shears, cut along both sides of the backbone and remove it.
Flip the turkey over and press down firmly on the breastbone to flatten.
Pat the turkey dry and rub with olive oil or melted butter.
Mix salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, lemon zest, and minced garlic in a bowl.
Rub the seasoning mixture all over the turkey.
Transfer the turkey to a roasting rack over a baking sheet.
Roast for 75-90 minutes, until the thickest part of the breast registers 165°F (75°C).
Let rest for 15 minutes before carving and serving.
