Spatchcock Turkey Recipe

A juicy and crispy spatchcock turkey that cooks evenly in less time, perfect for any holiday feast!

Ingredients
  

  • 1 whole turkey (12-14 lbs)
  • 1/4 cup olive oil or melted butter
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp smoked paprika
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 lemon, zested
  • 4 cloves garlic, minced

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Place the turkey breast-side down on a cutting board.
  • Using kitchen shears, cut along both sides of the backbone and remove it.
  • Flip the turkey over and press down firmly on the breastbone to flatten.
  • Pat the turkey dry and rub with olive oil or melted butter.
  • Mix salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, lemon zest, and minced garlic in a bowl.
  • Rub the seasoning mixture all over the turkey.
  • Transfer the turkey to a roasting rack over a baking sheet.
  • Roast for 75-90 minutes, until the thickest part of the breast registers 165°F (75°C).
  • Let rest for 15 minutes before carving and serving.

Notes

  • Ensure the turkey is fully thawed before cooking.
  • Save the removed backbone to make turkey stock.
