Ingredients
  

Dry Ingredients

  • 2 cups (250 g) all-purpose flour
  • ½ cup (60 g) finely ground almonds
  • ¾ cup (150 g) packed brown sugar
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground white pepper
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup (115 g) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

Combine the Dry Ingredients

  • In a medium bowl, whisk together the flour, ground almonds, brown sugar, cinnamon, ginger, cloves, nutmeg, cardamom, white pepper, baking powder, and salt.

Cream the Butter

  • In a separate large bowl, beat the softened butter until smooth and creamy. Add the brown sugar gradually and beat until the mixture becomes light and well combined.

Add the Egg and Vanilla

  • Beat in the egg and vanilla extract until incorporated. Scrape down the sides of the bowl if necessary.

Make the Dough

  • Gradually add the dry ingredients to the butter mixture. Mix just until a firm dough forms. Avoid overmixing. If the dough seems unusually dry or crumbly, add milk 1 teaspoon at a time until it comes together.

Chill the Dough

  • Shape the dough into a flat disc, wrap it, and refrigerate for at least 1 hour. Chilling makes the dough easier to handle and helps prevent excessive spreading during baking.

Roll the Dough

  • Preheat the oven to 175°C (350°F). Line baking sheets with parchment paper.
    Roll the chilled dough to approximately 3–5 mm thick on a lightly floured surface.

Cut the Cookies

  • Use a cookie cutter to cut the dough into your preferred shapes. For traditional Speculaas, press the dough into a lightly floured decorative wooden mold, then carefully release it.

Cool Completely

  • Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack. They will become noticeably crisper as they cool.

Notes

  • Butter: Use unsalted butter so you can control the salt level.
  • Spices: Freshly ground spices provide the most fragrant flavor.
  • Almonds: Ground almonds are traditional in many Speculaas recipes but can be omitted if necessary.
  • Chilling: Do not skip chilling the dough; it makes rolling and shaping much easier.
  • Thickness: Thinner cookies will be crispier, while slightly thicker cookies will have a more substantial bite.
  • Molds: Dust traditional wooden molds lightly with flour before pressing in the dough.
  • Baking: Watch the cookies closely during the final few minutes because they can brown quickly.
  • Storage: Store completely cooled cookies in an airtight container
