- 1 pack  ramen or rice noodles
 - 1 tbsp  sesame oil
 - 1 tsp  minced garlic
 - 1 tsp  grated ginger
 - 1 tbsp  soy sauce
 - 1 tsp  rice vinegar
 - 1 tsp  sriracha or gochujang (adjust to taste)
 - 1 tsp  honey or brown sugar
 - 1/2 tsp chili flakes (optional for extra heat)
 - 1/2  cup  vegetables (bell peppers, carrots, or spinach)
 - 1 tbsp chopped green onions
 - 1 tsp  toasted sesame seeds
 - 1  fried or poached egg (optional)
 
 
Cook the noodles: Prepare noodles according to package instructions, then drain and set aside.
Make the sauce: In a small bowl, mix soy sauce, rice vinegar, sriracha, honey, and chili flakes.
Sauté aromatics: Heat sesame oil in a pan over medium heat. Add garlic and ginger, cooking until fragrant.
Add vegetables: Stir in the vegetables and cook for 2-3 minutes until slightly tender.
Combine: Add cooked noodles and sauce, tossing to coat evenly. Cook for another minute.
Finish: Serve hot, garnished with green onions, sesame seeds, and a fried egg if desired.
