Ingredients
  

For the Beef Stew

  • 2 lb (900 g) beef chuck, cut into 1½-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 large carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and cubed
  • 1½ cups diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup coconut milk
  • 1 tablespoon brown sugar
  • ½ teaspoon black pepper

Curry Spice Blend

  • 2 tablespoons curry powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric powder
  • ½–1 teaspoon red chili powder, according to taste
  • ½ teaspoon garam masala
  • 1 bay leaf

For Garnishing

  • 2 tablespoons fresh cilantro, chopped
  • Fresh lime wedges
  • Optional sliced green chili

Instructions
 

Prepare the Beef

  • Pat the beef cubes dry using paper towels. Season them lightly with salt and black pepper.
    For deeper flavor, heat vegetable oil in a large skillet over medium-high heat and brown the beef in batches for 2–3 minutes per side. Browning is optional, but it adds excellent flavor and color to the finished stew.

Sauté the Aromatics

  • Using the same skillet, add the chopped onion and cook for 3–4 minutes until softened.
    Add the garlic and ginger and cook for another 30–60 seconds until fragrant.

Add the Spices

  • Add curry powder, cumin, coriander, paprika, turmeric, chili powder, garam masala, and cinnamon.
    Stir continuously for about 30 seconds. Toasting the spices briefly helps release their aroma.

Transfer to the Slow Cooker

  • Place the browned beef into the slow cooker. Add the sautéed onion mixture, carrots, potatoes, diced tomatoes, and tomato paste.
    Pour in the beef broth and coconut milk.
    Add Worcestershire sauce, brown sugar, salt, pepper, and the bay leaf.

Finish and Serve

  • Stir in fresh cilantro just before serving. Add a squeeze of fresh lime juice for brightness.
    Serve hot with steamed basmati rice, naan, roti, or crusty bread.

Notes

  • Best beef cut: Beef chuck works especially well because its connective tissue becomes tender during long cooking.
  • Browning is optional: You can add raw beef directly to the slow cooker, but browning provides deeper flavor.
  • Spice level: Adjust chili powder according to your preferred level of heat.
  • Coconut milk: Full-fat coconut milk produces a richer and creamier curry gravy.
  • Potatoes: Cut potatoes into similar-sized pieces so they cook evenly.
  • Gravy consistency: The stew will naturally thicken slightly as it cools.
  • Fresh lime: A little lime juice at the end balances the richness of the curry.
  • Resting time: Let the stew sit for 10 minutes before serving to allow the flavors to settle.
