- 1 cup black beans (cooked or canned)
- ½ cup quinoa (rinsed)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1 carrot (chopped)
- 1 bell pepper (chopped)
- 4 cups vegetable broth
- 1 tablespoon olive oil
Heat olive oil in a large pot Add onion and cook 4–5 minutes Add garlic and cook 1 minute.
