Ingredients
  

For the Crab

  • 1 kg fresh whole crabs, cleaned and cracked
  • ½ teaspoon turmeric powder
  • 1 teaspoon salt
  • 2 tablespoons mustard oil

For the Curry

  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1½ tablespoons ginger-garlic paste
  • 3–4 green chilies, slit
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 3 green cardamom pods
  • 3 cloves
  • ½ teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1½ teaspoons red chili powder
  • 1½ teaspoons coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • 1 cup hot water, or as needed
  • 2 tablespoons fresh coriander leaves, chopped

Instructions
 

Clean the Crab

  • Clean the crabs thoroughly under running water. Remove unwanted parts and crack the claws and larger shell pieces gently so the masala can penetrate the meat.
    Pat the cleaned crab pieces dry.

Season the Crab

  • Place the crab pieces in a bowl and add turmeric powder and salt.
    Mix gently and allow them to rest for about 10 minutes.

Lightly Fry the Crab

  • Heat mustard oil in a large, heavy-bottomed pan over medium heat.
    Add the crab pieces and lightly fry them for approximately 2–3 minutes on each side. The shells should become brighter in color and lightly coated with oil.
    Remove the crab and set aside.

Temper the Whole Spices

  • In the same pan, add the bay leaf, cinnamon, cardamom, cloves, and cumin seeds.
    Let them sizzle for a few seconds until fragrant.

Cook the Onion

  • Add the chopped onions and cook over medium heat until soft and golden brown.
    This step is important because properly cooked onions provide sweetness and depth to the spicy gravy.

Add Ginger, Garlic, and Chilies

  • Add ginger-garlic paste and slit green chilies.
    Sauté for 1–2 minutes until the raw smell disappears.

Cook the Masala

  • Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
    Add a small splash of water and stir over low heat to prevent the spices from burning.
    Add the chopped tomatoes and cook until they become soft and the oil begins to separate from the masala.

Add the Crab

  • Return the fried crab pieces to the pan and coat them thoroughly with the masala.
    Pour in approximately 1 cup of hot water and gently mix.
    Cover and simmer for about 10–15 minutes, depending on the size of the crab pieces.

Finish the Curry

  • Remove the lid and check the consistency of the gravy.
    Add garam masala and adjust the salt and chili level if needed.
    Simmer uncovered for another 2–3 minutes.
    Turn off the heat and sprinkle fresh coriander leaves over the curry.
    Allow the curry to rest for about 5 minutes before serving.

Notes

  • Fresh crab gives the best flavor and aroma.
  • Ask your fishmonger to clean and crack the crab if you prefer easier preparation.
  • Mustard oil provides a distinctive Bengali character to the curry.
  • Do not fry the crab for too long before making the gravy.
  • Adjust the number of green chilies according to your preferred heat level.
  • Use hot water rather than cold water when making the gravy.
  • Cooking time varies depending on the size and type of crab.
  • Allowing the curry to rest briefly before serving helps the spices settle into the crab.
