Ingredients
  

For the Salad

  • 2 pounds (900 g) baby potatoes, halved
  • 2 celery stalks, finely diced
  • ½ red onion, finely chopped
  • 2 green onions, sliced
  • 1 fresh jalapeño, finely chopped (remove seeds for less heat)
  • ¼ cup fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped

For the Creamy Dressing

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • ½ teaspoon crushed red pepper flakes
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions
 

  • Wash the potatoes thoroughly and cut larger ones into equal-sized pieces.
  • Place the potatoes in a large pot of salted water and bring to a boil.
  • Cook for 15–20 minutes until fork-tender but not mushy.
  • Drain the potatoes and let them cool slightly.
  • In a large bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic, vinegar, smoked paprika, chili flakes, salt, and black pepper.
  • Add the warm potatoes, celery, red onion, green onions, jalapeño, dill, and parsley to the bowl.
  • Gently fold everything together until the potatoes are evenly coated with the dressing.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to develop.
  • Garnish with extra dill, paprika, or crispy bacon just before serving.

  • Baby potatoes hold their shape best after cooking.
  • Don't overcook the potatoes to avoid a mushy salad.
  • Mixing while the potatoes are slightly warm helps absorb more flavor.
