- 2 ripe mangoes, peeled and diced
- 2-3 habanero peppers, seeded and chopped
- 1/2 cup white vinegar
- 1/4 cup honey (or maple syrup)
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- 1/4 cup water (adjust for consistency)
In a saucepan, heat a little oil over medium heat and sauté garlic until fragrant.
Add diced mangoes, habanero peppers, vinegar, honey, salt, and black pepper.
Stir and let the mixture simmer for about 10-15 minutes until the mangoes soften.
Remove from heat and let cool slightly.
Blend the mixture until smooth, adding water as needed for the desired consistency.
Stir in lime juice and adjust seasoning if necessary.
Transfer to a jar and refrigerate before serving.
