For the Noodles
- 400 g egg noodles, wheat noodles, or yellow noodles
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil, optional
For the Aromatic Base
- 4 garlic cloves, finely minced
- 1-inch piece fresh ginger, grated
- 3 shallots, finely sliced
- 2–4 fresh red chilies, finely chopped
- 1 tablespoon sambal oelek or Malaysian sambal
- 1 stalk lemongrass, tender inner portion finely minced, optional
For the Vegetables
- 1 medium carrot, julienned
- 1 red bell pepper, thinly sliced
- 1 cup shredded cabbage
- ½ cup bean sprouts
- 3 spring onions, sliced
- ½ cup snow peas or green beans, optional
For the Sauce
- 3 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon oyster sauce, optional
- 1 teaspoon brown sugar
- 1 tablespoon lime juice
- ½ teaspoon ground white pepper
For Garnishing
- Fresh cilantro
- Sliced spring onions
- Fresh red chili
- Lime wedges
- Fried shallots
- Crushed roasted peanuts, optional
Cook the Noodles
Bring a large pot of water to a boil.Cook the noodles according to the package directions until just tender.Avoid overcooking because the noodles will cook again briefly in the wok.Drain thoroughly.Toss with a small amount of oil to prevent sticking.Set aside.
Prepare the Sauce
In a small bowl, combine soy sauce, dark soy sauce, chili sauce, optional oyster sauce, brown sugar, lime juice, water, and white pepper.Stir well and set aside.
Prepare the Aromatics
Heat the vegetable oil in a large wok or skillet over medium-high heat.Add the sliced shallots.Stir-fry for approximately 1–2 minutes.Add the garlic, ginger, chilies, sambal, and optional lemongrass.Cook for another 1–2 minutes, stirring continuously.The mixture should become highly fragrant
Cook the Protein
If using chicken, add the sliced chicken to the wok.Stir-fry for approximately 4–6 minutes, until completely cooked.If using shrimp, cook for approximately 2–3 minutes, until pink and opaque.For tofu, stir-fry until golden around the edges.If using eggs, push the aromatics to one side, add the beaten eggs, and scramble until just set.
Add the Vegetables
Add the carrot, bell pepper, cabbage, and optional snow peas or green beans.Stir-fry over high heat for approximately 2–3 minutes.Keep the vegetables slightly crisp for better texture.
Add the Noodles
Add the cooked noodles to the wok.Use tongs to gently toss everything together.Make sure the noodles are evenly mixed with the aromatics and vegetables.

Add Bean Sprouts
Add the bean sprouts and spring onions during the final minute of cooking.Toss gently.The bean sprouts should remain slightly crunchy.
Finish with Sesame Oil
Turn off the heat.Add the sesame oil if using.Toss once more.Taste and adjust the seasoning.Add extra sambal or fresh chili for more heat, or a little lime juice for additional brightness.
Garnish
Transfer the spicy noodles to serving bowls or a large platter.Top with fresh cilantro, spring onions, sliced chili, and optional fried shallots or crushed peanuts.Serve immediately with lime wedges.
