Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 jalapeño pepper, finely chopped
  • 1 can (15 ounces) pumpkin puree, unsweetened
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons tomato paste
  • 2 cups vegetable broth
  • 1 tablespoon apple cider vinegar or fresh lime juice
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper, or to taste
  • ½ teaspoon ground black pepper
  • ¾ teaspoon salt, or to taste

Instructions

  • Drain and rinse the kidney beans and black beans thoroughly. Chop the onion and red bell pepper, mince the garlic, and finely chop the jalapeño. Measure out the pumpkin puree, broth, tomatoes, and spices so everything is ready before cooking.
For a milder chili, remove the jalapeño seeds and inner membranes. For extra heat, leave some seeds in or add a little more cayenne pepper.
  • Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and red bell pepper. Cook for approximately 5–6 minutes, stirring occasionally, until the vegetables soften.
Add the minced garlic and jalapeño. Cook for another 30–60 seconds until fragrant, taking care not to burn the garlic.
  • Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, black pepper, salt, and optional cinnamon.
Cook for about 30 seconds, stirring constantly. Heating the spices briefly helps release their aromas and gives the chili a deeper flavor.
  • Stir in the pumpkin puree and tomato paste until the vegetables are evenly coated. Add the diced tomatoes, kidney beans, black beans, and vegetable broth.
Mix thoroughly to combine all the ingredients. The mixture may look slightly thin at this stage, but it will thicken as it simmers.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover partially and simmer for 25–30 minutes, stirring occasionally to prevent sticking.
If the chili becomes too thick, add a little extra vegetable broth or water. If it is too thin, continue simmering uncovered for a few more minutes.
  • Taste the chili and adjust the salt, chili powder, and cayenne pepper as needed. Stir in the apple cider vinegar or fresh lime juice just before serving. This small amount of acidity balances the sweetness of the pumpkin and brightens the overall flavor.
For a smoother texture, mash a small portion of the beans against the side of the pot and stir them back into the chili.
  • Ladle the hot Spicy Pumpkin Chili into bowls. Garnish with fresh cilantro, sliced jalapeños, avocado, shredded cheese, or a spoonful of sour cream.
Serve immediately with warm cornbread, steamed rice, baked potatoes, or crunchy tortilla chips for a complete and comforting meal.

Notes

  • Choose plain pumpkin puree: Use unsweetened pumpkin puree rather than pumpkin pie filling, which contains sugar and baking spices.
  • Control the heat: Jalapeños and cayenne pepper can vary in intensity. Start with less and add more after tasting.
  • Use low-sodium ingredients: Canned beans, tomatoes, and broth can contain significant sodium, so reduced-sodium versions are helpful.
  • Make it thicker: Simmer uncovered or mash some of the beans to create a thicker, heartier texture.
  • Use fresh pumpkin if desired: Cook and mash roasted pumpkin until smooth before adding it to the pot.
  • Allow time for flavors to develop: The chili often tastes even better after resting for 10–15 minutes before serving.
  • Keep toppings separate: Add avocado, sour cream, cheese, and fresh herbs immediately before eating.
  • Store leftovers safely: Refrigerate cooled chili in an airtight container within two hours of cooking and use within 3–4 days.
